The use of different types of extenders such as cassava, rice, pumpkin and sweet potato is an important alternative that allows maintaining the food offerings without giving up the use of wheat flour, which can never be completely replaced. The networks echo, through memes, the good humor of the Cuban. "My bread has tetuan", "mine has a branch", "thanks to the pumpkin they put in it, now I can see better"... and so on. However, there are criteria that go beyond simple jocularity, and attack the quality of the product: "With these inventions you can no longer eat".

The workers of the Deleyte bakery, in the municipality of Antilla, show that "with those inventions" they can be eaten, but also that when they are made properly, their quality is good and their texture is soft. In addition to all this, they have a significant nutritional value.

Extenders are used all over the world, but in Cuban bakeries there was no such habit. In addition, the use of local raw materials constitutes a significant substitution of imports.

An approach to different moments of the production process allowed us to know that the recipe for good bread also includes: respect for the consumer, love for work and attachment to ethics... ingredients that have never been scarce in this collective.
